Introducing the rice factory

At Yama, our goal is to bring high-quality Japanese food and service that you can find in Los Angeles. That said, we are so excited to announce our partnership with the rice factory!

the rice factory is a specialty store for Japanese rice that mills high-quality rice to order and delivers the next day. With brick-and-mortar locations in Honolulu and New York, their Nanatsuboshi rice grains are now available in white rice, brown rice, and half-polished rice varieties at both stores.

What's the Difference?

Most of the rice from California is milled to white rice in California and stored under temperature sometimes reaches more than 120°F. It starts dry and oxidizes just after milling the rice, and the taste decreases rapidly by the quality deterioration under the high temperature.

On the other hand, the rice factory imports their rice from Japan from rice farmers who use low or no pesticides. Unlike most Californian rice that’s shipped and stored to LA with no control of temperature during shipment and storage, the rice factory’s rice is imported and stored in LA with temperature and humidity control at every step. Plus, once the rice is ordered, they will mill and deliver within 1-2 days for optimal freshness.

That’s why the best way to taste the fresh and delicious rice is to mill just before eating in Los Angeles!

Rice Grown in Hokkaido

Hokkaido is Japan's largest food base, and the Asahikawa/Takasu region is especially famous for producing delicious rice.

The mineral-rich underground water that originates from Daisetsuzan Mountain Range, the fertile soil from its volcanic activities, and the temperature difference between day and night–a condition that is unique to the basin–all help to grow delicious rice.

About Nanatsuboshi Rice

Grown and harvested in Hokkaido, NANATSUBOSHI is the best for sushi rice, because of the very light taste and little stickiness. More than 80% of sushi restaurants in Sapporo/Hokkaido, which is famous for Sushi, are using Nanatsuboshi! Even beyond sushi, its flavor and texture makes it versatile for dishes such as curry and rice bowl dishes, thus making this the almighty rice variety.

Fun fact: Nanatsuboshi is the favorite rice grain of Japanese celebrity Matsuko Deluxe!
