Nicknamed “prime content real estate” by the marketing team, he naturally steals the spotlight on camera or off.

Originally from Miyagi, Japan, he arrived in the U.S. in 1984 with no English and boundless determination, starting out in transportation. Now known at Yama as “Shu-Time,” he’s beloved for his warmth, kindness, and quick smile. A bookworm with a passion for karaoke, he’s equally at home quoting novels or belting out ‘80s ballads in the halls.

Learn how to make great “maki (roll) sushi” with Shu Takizawa, a master sushi chef with 25 years of experience at Hide Sushi and Asakuma. You will learn how to make sushi rice, and the proper way to make a sushi roll. You will make both Spicy Tuna and Salmon Avocado Rolls!

Originally from Nara, Japan, she found her passion in growing kōji and fermenting foods. Her first homemade miso sparked a love for the quiet magic of kōji and its harmony with nature. That joy led her to start HAKKO, where she shares the art of fermentation with care, creativity, and heart.
